Another great recipe for pregnancy food!

When I was almost ready to pop and found I had less room in my stomach and at times severe heartburn Soups were a great way to nourish myself! (I found liquids in different forms to be easier to ingest..) And voila, here is a recipe for a Potato and Leek soup, super easy to make and delicious!

You will need…
-A few potatoes, I usually use the red ones
-Leek
-Garlic, to taste, one or two cloves
-Water or your favorite stock (*if you use stock you probably won’t need additional salt)
-butter
-salt* and pepper

Then to make it….
You sauté the finely chopped leeks in a little butter, until soft and a little brown.
Add diced potatoes, stir and let it sauté for a few minutes.
Add water or stock, a few cups, depending on the consistency you like, more water for a thinner soup…
Let it simmer until the potatoes are cooked nice and soft.
Using a hand held mixer puree the mix until smooth.
Add minced garlic, salt and pepper to taste.
Let it simmer for a little longer….
Then Enjoy!
